[Recipe] Tofu Skin/Yuba Salad

This is a nice cold dish for the summer and can be prepared in relatively large quantities. The tofu skin has a nice chewy texture that pairs well with the crunch from the celery and peanuts.

Unlike regular salads this is not sweet or sour, it’s salty. There are also no leafy greens.

Tofu Skin Salad #

  • Prep time: 8 hours
  • Cook time: 15 minutes

Ingredients #

  • 1 pack of dried tofu skins
  • 1/2 bunch of celery
  • 1 cup raw peanuts
  • sesame oil
  • salt
  • black pepper

Directions #

  1. Soak the tofu skin for 6 hours or until they are soft.
  2. Cut the tofu skin into 2 inch pieces, discarding any sections that are extremely hard and compacted.
  3. Cut the celery into 1 inch pieces.
  4. Boil a pot of water.
  5. Blanch the celery for 30 seconds (not too long or else it won’t be crispy)
  6. Boil the peanuts and yuba for 5 minutes.
  7. Drain all the ingredients and mix it in a large bowl with salt, black pepper, and sesame oil.
  8. Refrigerate for 2 hours and serve.
